recipe: peanut butter billionaire bars

Hi y'all!
Since everyone is isolated right now, I've noticed a crazy increase in the amount of baking going on! I decided to join in this weekend and make a version of Bon Appetit's Tahini Billionaire Bars. I didn't have tahini or sesame seeds on hand, so I substituted for what I had, which was peanut butter, but you can use any nut butter. Almond butter, I think, would be amazing.

These billionaire bars are truly a thousand times better than any millionaire bar. There's three layers of crumbly shortbread, nutty butterscotch caramel, and bittersweet chocolate, topped with a sprinkle of flaky sea salt. INGREDIENTS
1 cup flour
1/2 cup powdered sugar
1 1/2 tsp Morton kosher salt, divided
1 cup chilled butter, divided
2 large egg yolks
1 1/2 cup packed light brown sugar
3/4 cup heavy cream
1/2 cup nut butter
1 tsp vanilla extract
6 oz. bittersweet chocolate (65-75%)
flaky sea salt (optional, but highly recommended)
DIRECTIONS
Whisk together flour, powdered sugar, and 1/2 tsp salt. Add 1/2 cup butter, cubed, and work together with your hands until butter is pea-sized. Add egg yolks and mix with a spatula or wooden spoon until combined.
Line a square pan with parchment paper. Spread the dough evenly in the pan and poke holes with a fork. Flour the fork as necessary. Bake for ~30 minutes in a 350 degF oven or until golden brown. (Might be less time if using metal.)
Meanwhile, melt remaining 1/2 cup butter in a saucepan over medium heat. Add brown sugar and whisk frequently until dissolved. Add heavy cream and remaining 1 tsp salt and whisk constantly for ~7 minutes, or until caramel can coat the back of a spoon thickly. Pour over mostly cooled cookie layer and chill for an hour.
Melt chocolate in a double boiler. Pour over chilled caramel layer. Sprinkle flaky sea salt and chill for an hour or until caramel is set. Cut into bars with a heated serrated knife for clean edges. Use sawing motions!
